Papa Dong's Sichuan Chili Noodles (Ganban Mian)

Ingredients (2 large portions):

  • Noodles:
    • 300g fresh wheat noodles (or your preferred noodles)
  • Sauce Mixture:
    • 4-6 tablespoons of Papa Dong's Sichuan Chili Oil (adjust for spicyness)
    • 2 tablespoons light soy sauce
    • 1 tablespoon dark soy sauce
    • 1 tablespoon Chinkiang vinegar
    • 2 teaspoons sugar
    • 1 teaspoon sesame oil
    • 1/2 chicken broth cube 
  • Toppings:
    • 300g minced pork (or substitute)
    • 2 cloves garlic, minced
    • 1 teaspoon ginger, minced
    • 3-4 green onions, chopped
    • 1 cup bean sprouts stir-fried (optional)
    • 1 cup bok choy, chopped and stir-fried
    • (Roasted) crushed peanuts for garnish
    • (Roasted) sesame seeds for garnish
    • Coriander for garnish

Instructions:

  1. Prepare the Sauce: Combine Papa Dong's Sichuan Chili Oil, light soy sauce, dark soy sauce, Chinkiang vinegar, sugar, sesame oil and chicken broth cube in a bowl. 

  2. Cook the Noodles: Boil the noodles until al dente, rinse under cold water, and set aside.

  3. Cook the Toppings in a pan: Add the minced pork and cook until it starts to brown. Add the garlic, ginger, and half of the green onions. Continue to cook until the pork is fully cooked and set aside. Quickly stir-fry the bok choy and bean sprouts in the same pan.

  4. Assemble the Dish: In a deep bowl add first the prepared sauce. Then add the noodles and top with the pork, stir-fried bok choy and bean sprouts. Garnish with remaining green onions, crushed peanuts and coriander. Finish off with roasted sesame seeds. 

  5. Serve: Mix everything together and enjoy Papa Dong's version of the traditional Sichuan Ganban Mian.
